Hello Reader!

I meant to send this to you over the weekend, but my family and I have been busy with unboxing our kitchen and officially "moving in" to our new kitchen. Consequently, this newsletter fell by the way... which explains why you are receiving it on Monday instead of Sunday.

So today I'm going to make this introduction short and sweet. We're talking about late summer produce, which is my absolute favorite. (In my notes, I have the following written: okra! tomatoes! peaches!)

So today, it's all about those three.


For the Okra Enthusiasts:

  1. ​Oven Roasted Okra: The first time I made this recipe for my family, I secretly hoped that our kids wouldn't love it so that I could eat more. Joke's on me because they were and are obsessed. In fact, this is an often requested recipe for birthdays because roasted okra feels like an occasion without actually requiring a ton of work.
  2. ​Oven Fried Okra: This one is a bit more involved, but let me tell you: if you grew up with and/or adore fried okra, you're gonna love this one. We coat the okra in breading and "oven fry" it to perfection. It's crunchy and crispy and perfect for dipping or just enjoying on its own.

For the Tomato Fans...

  1. ​Mediterranean Cucumber and Tomato Salad: Cucumbers and tomatoes are a match made in heaven, and this salad, topped with a homemade vinaigrette and feta crumbles, feels elevated. This is the side or starter to round out your meal that tastes like summer in every bite.
  2. ​Fresh Cream of Tomato Soup: If your tomato plant(s) is still producing and you don't want to make another raw tomato dish, this cream of tomato soup is a great one to make. (Please note that this is still a warm soup, so if that bothers you, hop on down to the next recipe.) It's somehow light and fresh while still being warm and cozy. 10/10 recommend.
  3. ​Heirloom Tomato Bruschetta: This is the epitome of a summery tomato dish, and it is stunning in its simplicity. I used heirloom tomatoes for this one (because we had them from our CSA), but any fresh tomatoes will work.
  4. ​Oven Roasted Tomatoes: This is another tomato dish that I'm obsessed with. Roast the tomatoes until they're jammy and perfect and then enjoy on their own or smear them on toast (or add to avocado toast.)

For the Peach Lovers:

  1. ​Peach Overnight Oats: A pre-made breakfast ready to be enjoyed whenever you wake? Yes, please. Blitz some peaches (peel and all) and combine them with overnight oat ingredients to make this delicious, peach-forward meal.
  2. ​Ginger Peach Punch: I love a mocktail year-round, and I especially love one that calls for seasonal ingredients. This one is simple to put together and requires no pre-work, so all you have to do is throw it into your cup and sip.
  3. ​Grilled Peach Crostini: If you ever invite me to a gathering during peach season, I'm bringing this. The grilled peaches are so sweet and perfect when paired with the creamy ricotta cheese, crunchy crostini and that balsamic glaze.
