The dog days of summer have arrived, and depending on where you live, they are scorching...

This is the perfect time to indulge in seasonal no bake treats.

Today, I've got some recipe ideas for you that feature some delightful summertime ingredients that are FROZEN. And we are not turning on the oven for them at all, which is the BEST.

Whether you're hosting a backyard barbecue or simply craving a treat, these desserts are guaranteed to impress.

Easy, no-churn deliciousness:

No Churn Peanut Butter Ice Cream with Pecans and Chocolate Chips

Not gonna lie.. this tastes like a Butterfinger in ice cream form. The peanut butter, pecans and chocolate chips just work, and this recipe is no churn, which means you don't need an ice cream machine to make it in your kitchen!

Chocolate Banana "Ice Cream"

This one's for the banana lovers who also like naturally sweet treats! This "ice cream" was made in the food processor to celebrate our older one's first birthday. It's perfectly refreshing and full of banana flavor, if you're into that.

No Churn Brownie Ice Cream

Chop up store-bought brownies and toss them into this ice cream base to make the most dreamy brownie chunk ice cream. This is another no churn variation, so it's incredibly simple to make when you have the right tools. (And you probably do in your kitchen!)


More ice cream... but with (a little) more effort:

Ice Cream Cookie Sandwiches

Make this easier for yourself by using your favorite store-bought cookies. (Go to your store's bakery and find something decadent.) Use your favorite ice cream to make sandwich cookies, freeze them, and voila! Easy ice cream sandwiches that feel special, which is exactly what the summer needs.

Bourbon Stracciatella Raspberry Gelato

Realistically, this is the recipe that takes the most time and effort in this email... and it requires an ice cream maker. (I've got links below for you to the one I own and another one I've used.) The base of this ice cream is vanilla with delightful stracciatella chocolate throughout. And we've got a bourbon raspberry swirl added to make it even more decadent. Skip the bourbon if you're not a drinker or want to share this with kids. It's fabulous either way.


Ice pops and boozy pops:

Pimm's Pops

If you're a Pimm's Cup lover, listen up. I took my NOLA Pimm's Cup recipe and turned it into an ice pop. It's delightfully refreshing and has a lovely pop from the ginger and lemon paired with the Pimm's No. 1. This isn't for everyone, but the people who it IS for? You're welcome.

Spiced Rum Horchata Pops

Much like the previous ice pop, these horchata ones are spiked. This time, with spiced rum. You could leave it out if you're not into that, though I love the flavor the spiced rum lends this. Please don't measure the rum with your heart! You could run the risk of adding too much, and then the pops won't freeze. (Ask me how I know, haha.)

Blackberry Strawberry Yogurt Popsicles

This recipe's for the berry lovers! The colors are deep and gorgeous, and so are the flavors. Blackberries and strawberries combine with yogurt and then are swirled into the popsicle mold to make these stunning pops. The longest part of this is the freezing process.

Blueberry Cheesecake Pops

I'm not going to lie to you and tell you that this tastes exactly like a cheesecake because it does not, but this pop has cheesecake vibes. Also, the combination of creaminess with the blueberries and lemon is perfect for a hot summer's day.


Some things you might need to make these recipes...

  • Food processor: If you're making that banana "ice cream" (which is sometimes referred to as nice cream, which irritates me to no end), you'll need one of these. I have a mini food processor, and it gets a LOT of work in our kitchen. If you use this, though, you'll have to make yours in two batches.
  • Hand mixer: If you're making no churn ice cream, you either need a really strong arm or a mixer that can whip up that whipped cream until dreamy. I'm replacing my 20+ year old hand mixer with this cordless version.
  • Popsicle mold: You can make pops without them. The plastic version that I've had for more than ten years is no longer available online, but if I were purchasing new, I would be looking at this silicone version.
  • Ice cream maker: This isn't necessary for all of these recipes. (Just the gelato.) I've used this Cuisinart ice cream maker to great success. You could also purchase the KitchenAid stand mixer attachment if that's a better fit for you.
