If you had told me when I published my 5-ingredient, 5-minute homemade pancake mix earlier this year that one of my children would be finding our jar and diligently making pancakes every weekend for the entire family (and various weekend guests), I would've laughed.

And yet, here we are.

And she's not the only one obsessed. This post has been climbing the ranks and is actually in the top 5 for traffic during these past few months, which is really exciting!

Some quick tips for making this:

  • If you have a container large enough, double or triple the recipe for bonus pancakes. (This is the jar I keep mine in. It's big enough for a double batch with zero overflow drama, which is exactly what I need.)
  • Use whatever size cookie or measuring scoop to make pancakes the size you prefer. (I recently received a comment informing me that only children eat 1.5-tablespoon pancakes, and I say to each their own. I love me some silver dollar pancakes, and so do my kids. This is the scooper I always use.)
  • A good griddle makes the whole process faster. You've got more real estate and significantly less flip-in-shifts than a skillet. We've loved this cast iron one for years.
