Here's how I recommend using the summer's best fruit right now ☀️

Hey, Reader, it’s Erin.

While I don't love the temperature of this part of summer (who does?), I do love summer produce so so so much.

It's scorching down here in Texas this week, and I, for one, am trying not to melt. My family and I are also mowing through all kinds of fresh fruits because they are delicious and refreshing and perfect straight out of the fridge.

Today, I am sharing recipes that celebrate all the beautiful berries and stone fruits in their cooked form. I don't have an oven to enjoy these right now, but if you do? This is the move.

Here are some of my favorite ways to use summer's best produce...

Desserts to share:

Peach Cobbler

We've been making this cobbler recipe for years and everyone in our household is obsessed with it. Fresh peaches never miss in this dish. Skip the pecans if you're not into them... it still will taste amazing. (Also, this is a great way to make your way through a massive box of peaches, in case you find yourself with one...)

Blackberry Peach Hand Pies

This one's for the overachievers who enjoy spending a lot of time in the kitchen. These hand pies are absolutely delicious and pair two of the season's best fruits in a handheld treat. This one is a labor of love to make, but the end result is worth the fuss.

Blackberry Cobbler

Like the peach cobbler above, this one has been a family favorite for years. It is also dairy-free.

Quick and Sweet Breads:

Fresh Cherry Quick Bread

This is one of my favorite ways to use fresh cherries if I am not eating them by themselves. This bread feels decadent, but it comes together pretty quickly and has wonderful lemon undertones and beautiful bursts of cherry.

Lemon Zucchini Bread

If you're a zucchini bread fan, you're going to love this one because it tastes like the classic... but has the addition of some lemon. The zestiness of the lemon paired with the zucchini makes for a delicious loaf of sweet bread. Serve it for breakfast, a snack, or even dessert and watch it disappear

Start the day with fruit

Blueberry Pancakes with Blueberry Maple Syrup

This one's for the blueberry monsters in your lives. (Three live in my household.) These homemade pancakes burst with blueberry flavor. And that homemade blueberry maple syrup takes them over the top. Think pancake house syrup but scratch-made with actual blueberries.

Mixed Berry Muffins

We love a muffin in this household, and these mixed berry muffins combine some of our favorites into one recipe. This is the same muffin base that I use for various muffin recipes on my site, and these are fluffy and light and bursting with fruit. They are perfect for this time of year. Make it for a weekday breakfast or as a treat for the weekend.

Blueberry Waffles

We make a lot of recipes in our kitchen, and this is one that is constantly on repeat. You can make it with fresh or frozen blueberries. My husband and girls particularly enjoy this one for a lazy weekend morning.

Some tools you need to make these fruit recipes:

  • Loaf pan: This comes in handy whenever you are making quick breads or a sandwich loaf. You can also make a half batch cookie cake or brownies in here. (Ask me how I know.) This is my favorite brand for all metal baking products in the kitchen. I use the 1 lb. loaf pan with all of my recipes.
  • Ceramic baking dish: For those cobblers... but for so many other things, too. This is a great one to have around because it is solid and a wonderful size, whether you're making sweet or savory dishes.
  • Muffin tin: It's not just for muffins or cupcakes, friend. It's also great if you want to make homemade peanut butter cups or other candies. Much like the loaf pan, USA Pan is my favorite brand (and I have this 6-muffin tin.) While I don't own their 12-muffin tin, I will be upgrading to it soon because it is easier to clean than my current one.
  • Waffle iron: We didn't have one of these for many years and lived our lives just fine... until we had kids who started requesting waffles. We started off with a single waffle iron, and we honestly loved this one. Recently, we upgraded to this larger iron, which helps us make more waffles in less time. The shape is a little different, but we really enjoy our new waffle iron, too.

I hope that one or two of these recipes fit the bill for you this week, and I hope that you find them delicious!
