Now that spring break is over and our Easter celebrations are wrapping up, it feels like things are really heating up… and I’m not just talking about the weather. (But that, too!) This is the last month before the chaos some call May-cember (because it’s busier than the holiday season.) So this month, I am trying to soak up the best of springtime because it will be over before we know it. For my house, that looks like:
I’m not complaining, but I do think I deserve a little treat, don’t you? ;) April is just that for me: a little slice of sweetness before the spicy hot summer arrives. And you, my friend, deserve a little treat, too. Here’s what is on my meal plan this month: For busy weeknights:Slow Cooker BBQ Pulled PorkThe slow cooker saves my life multiple times a week, and this pulled pork gives me a little taste of home with very little effort. You can eat it on sandwiches or throw it on some nachos, pizza or even a salad. It’s sooooo good every single time.
Buffalo Chicken CasseroleOn weeks when we get less takeout, I like to bring the flavors home. If you like the taste of Buffalo wings, this Buffalo Chicken Casserole is a nod to the classic bar food. It's super simple to make in under an hour.
When you want to get together:Baked Brie in Puff PastryI recently hosted my Mahjong group, and I took time to make a baked brie. It's one of the best appetizers, but oh so easy and always delivers with flavor and presentation. Everyone is always impressed and devours the whole thing... and this one can be made with your favorite jam before you wrap it in puff pastry.
Strawberry Cinnamon RollsApril is National Brunch Month, and we are brunching it up every weekend I can. These strawberry cinnamon rolls taste like spring weekends. They're made with a yeasted dough, fresh strawberries and a homemade glaze on top. They’re worth the wait and effort and wonderful for sharing.
Planning ahead:Pimento CheeseI recently made this pimento cheese, and it's all I can think about.I've been putting it on sandwiches, burgers and breakfast biscuits, but it also makes a fantastic appetizer. Coming soon, at the very beginning of May, I’ll be serving it at our annual Kentucky Derby party. Thankfully, no hats are required to enjoy this easy spread.
Freezer-Friendly Breakfast TacosEveryone always plans a taco night for Cinco de Mayo, but I like to start the day with breakfast tacos. They’re a staple here in Texas, but they can be time-consuming to cook and assemble. These breakfast tacos are my go-to for busy days, and they’re great for Meal Trains, too. They are easy to heat up in the morning and have a delightful savory breakfast that you didn't have to make that day. Thanks, Past You!
