Spring breakfast ideas that are worth waking up for ☀️

I discovered something called moon joy this week.

If you were following the Artemis II and watched any of the live broadcasts, you might've also been enchanted by these astronauts, by the NASA mission control, by everything about historic moment.

I will be honest and say I was not paying close attention at first because I was traumatized by the Apollo 13 movie as a child, and I tend to avoid space-related news. However, one of my girls watched the launch with friends, and when I discovered that there was going to be a live feed of the lunar flyby earlier this week, I decided that we should watch it. For the historic nature of it, if nothing else.

And so we watched the moment that the astronauts broke Apollo 13's record of farthest distance from Earth ever traveled... and the following moment when they requested to name two craters on the moon, including one after Reid Wiseman's late wife.

I cannot tell you how many times I have teared up over that moment (and the following hugs and tears shared between the astronauts.) I cannot tell you how many people I've shared that video clip with because... it is quite a few.

Our world is a really challenging place. (This is putting it lightly.) Many weeks, the bad news outweighs the good. And even though there was some serious bad news this week, the Artemis II and the joy, wonder and hope it inspired, was a bright spot for me.

These are batch-friendly and surprisingly simple. Make a bunch on Sunday, wrap them individually, and reheat throughout the week for an easy win. There is a little assembly required, but they are totally worth it when you're running out the door.

Sour Cream Blueberry Muffins

Classic, reliable and they freeze beautifully. Make a double batch, and you've got breakfast sorted for a week or more... depending on how much your people love muffins.


For those weekend mornings that you actually want to brunch (at home):

Lemon Ricotta Pancakes

Fluffy, tangy and impossibly light, these are what weekend mornings were made for.

Homemade Crepes

Fill them with fresh fruit and whipped cream or go the Nutella route. Either way, they look fancy... and they come together surprisingly fast.

Dutch Baby

This recipe looks like you spent hours on it, but it's actually super simple. Perfect for impressing brunch guests... or just yourself just because.

Lemon Blueberry Coffee Cake

Bake this during the weekend and enjoy it all week long. It pairs beautifully with coffee and keeps well, too.

Mixed Berry Muffins

These are another freezer-friendly win. Bake them when you have time and enjoy them when you don't.
