12 pumpkin breakfasts worth setting an alarm for...

entertaining made easy.

Hello Reader!

It's officially October, and y'all know what that means — it's pumpkin season.

While some members of my family have been enjoying pumpkin muffins for the last three weeks, some of us have been holding off.

Not anymore.

Today, I am sharing some of my favorite pumpkin breakfasts. (Before you ask, I know, I know. I have a massive amount of pumpkin muffin recipes. I am not quite sure what I was thinking several years ago, other than I really enjoy the flavors and wanted to explore them as much as possible. I don't think it's a bad thing, unless, of course, you're trying to figure out HOW you can get them all to rank on search engines, then you've got a fun barrel of monkeys...)

In addition to muffins, we've got some waffles, pancakes, a breakfast bake, and some coffee drinks...

Pumpkin muffins and bread:

  • Easy Pumpkin Spice Bread: This is the pumpkin bread recipe that both my kids learned how to make because they love it so much. Most weekends, you can find them in our kitchen making a double batch to ensure they have enough for breakfast every morning.
  • Brown Butter Pumpkin Streusel Muffins with a Maple Cream Cheese Glaze: Is it a mouthful? Yes. Is it absolutely delicious and an elevated muffin for the season? Also yes.
  • Pumpkin Cream Cheese Muffins with a Nutella Swirl: These are similar to a well-known coffee shop's muffins, but with a twist. The Nutella swirl really elevates them, in my opinion.
  • Mini Pumpkin Muffins with Chocolate Chips: This is my most basic pumpkin muffin recipe. It was made when my older one was little, so it doesn't call for a lot of spices. If you like more spices, I recommend mixing in some pumpkin pie spice for that pop.
  • Vegan Pumpkin Muffins: We aren't vegans, but I have friends who are, and I went through a vegan muffin phase years ago. If you didn't know these were vegan, you would never guess. They are sky-high and packed with pumpkin flavor!
  • Chocolate Chip Pumpkin Bread: Much like those mini pumpkin muffins, this one is pretty straightforward without too much spice. Is it breakfast or is it dessert? Who can know? Either way, it's delicious.

Make these for weekend brunch:

  • Pumpkin Waffles with Cinnamon Maple Syrup: These are an October mainstay in our kitchen for the weekends. The combination of pumpkin puree in the waffle batter with the cinnamon-infused maple syrup is elite.
  • Buttermilk Pumpkin Spice Pancakes: This one's for the pancake people! Classic buttermilk pancakes are livened up with pumpkin puree and pumpkin spices. What's not to love?
  • Pumpkin Overnight French Toast Casserole: Make this the night before and let it hang out in the fridge to soak up that pumpkin custard, and then bake it off in the morning. This one is pure decadence.

Breakfast and brunch sippers:

  • Homemade Pumpkin Spice Syrup: PSL fans, this one is for you! Calling for real pumpkin, sweeteners and spices, making a batch of this on the weekend and then using every day in your coffee is pretty much a must.
  • Cranberry Pumpkin Cold Brew: I know the combination might sound strange, but trust me when I say that it is delicious. This one is an elevated cold brew drink that you can mix on the spot for an at-home brunch
  • Pumpkin Spice Kombucha Cocktail: Inspired by a bunch of brunch drinks I had in Reno, Nevada, this one calls for pumpkin spice kombucha and your favorite sparkling wine. That's it. It is so simple, but feels so special for a brunch.

I hope that one of these recipes is there something you want to make soon.

Happy baking,
Erin
