Hello Reader!
Our weather appears to have finally turned... at least at night and in the early mornings. So walking our dog has been an absolute delight this week.
These cool early mornings have me thinking about cozy, seasonal dinners.
I wanted to send over some of my favorites, especially if you are looking for some fall-flavored meals to make sometime soon...
- Pumpkin Pulled Pork Bowls — yes, you can make a pulled pork bowl with any pulled pork, but this one calls for a homemade pumpkin barbecue sauce, and to me, it just really hits those fantastic fall flavors.
- Cinnamon Apple Pork Chops — pork and apples are a classic combination, and these pork chops are seasoned beautifully and cook to perfection with apples.
- Cranberry Chicken Thighs — it might sound like an odd combination, but trust me when I tell you that this works. Be sure to use skin-on, bone-in chicken thighs so that you can enjoy the crispy skin (if you're into that)!
- Chili Cornbread Casserole — this casserole combines the two classics into one dish. The recipe is for a beef and bean chili, but you can use your favorite ground meat if you prefer chicken or turkey.
- Dutch Oven Chicken and Dumplings — as a Southerner, this is one of my all-time favorite comfort foods. This one pot recipe comes together relatively quickly, thanks to rotisserie chicken.
- Roasted Butternut Squash Soup — butternut squash season is here, and it is so good. Roasting the squash makes for a more complex soup that feels like a warm hug in a bowl.
- Apple Cider Pulled Pork Sandwiches — this recipe has been a family favorite for years. The pork cooks in the slow cooker with apple cider and then is served with a delicious and simple apple coleslaw.
- Buffalo Chicken Casserole — like the classic tailgating dip, but in casserole form. This one's saucy and has some heat!
I hope a recipe or two on this list speaks to you and that you get to make it sometime soon.
Happy cooking,
Erin
