Hello Reader!

‘Tis the season for allllllllll things pumpkin, and I am here for it, after abstaining for more than a month. (Yes, I am one of those people who saves pumpkin and pumpkin flavors for October.)

So today, at long last, we are talking about pumpkin desserts. I have included some simple treats, as well as ones that take more time and effort.

There's something for everyone below...

  • Pumpkin Drop Cookies with Cream Cheese Icing: this recipe is having A Moment right now, and for good reason. These pumpkin drop cookies are the perfect soft texture and are topped with the most decadent frosting.
  • Pumpkin Cheesecake Dip: my classic cheesecake dip with pumpkin butter and pumpkin spices. This one is perfect for sharing!
  • Pumpkin Spice Rice Krispie Treats: there’s no real pumpkin in these, but we do need a bag of pumpkin spice marshmallows. Plan accordingly! Otherwise, they’re just regular Rice Krispie treats with a little bonus spice.
  • Pumpkin Cheesecake Brownie Bars: if you combined a brownie and cheesecake, you’d get these bars! Decadent dark chocolate serves as the base and the pumpkin cheesecake topping is sweet, a little tangy and perfectly spiced.
  • Praline Upside Down Pumpkin Cake: the first time we baked this one, we shared the cake with friends… and ate the entire thing in one sitting. My mother-in-law requested for me to make this last Thanksgiving for the whole family. It is spectacular and feels special without being super fussy.
  • Spiced Pumpkin Sugar Cookies: these slightly soft, slightly crisp sugar cookies call for pumpkin puree and spices. A fun twist on classic cut out sugar cookies!

More pumpkin treats from friends:

  • Pumpkin Dump Cake: how can you say no to a simple cake like this one? This one exudes pumpkin flavors and spices.
  • Pumpkin Pie Bars with a Shortbread Crust: for those of you who love a pumpkin pie but love shortbread, too. These bars are a dream!
  • Pumpkin Pecan Cheesecake: if you don’t mind going the extra mile and making a from-scratch cheesecake, this one’s worth the effort!
  • Pumpkin Fluff Dip: marshmallow fluff and pumpkin together? Say no more. This dip is simple to make and totally decadent.

Which one sounds best to you?!

Happy baking,
Erin
