7+ pots worth simmering this weekend (gumbo included)

Hello Reader!

When I was in journalism school years ago, one professor led a discussion about what was front page material. As a part of the discussion, he gave us four stories and asked which we would put on the front page, as well as what we might put elsewhere in the paper and what we might scrap.

One of those stories was a weather story, and I remember chuckling because I thought this was an easy assignment — that was going on an interior page.

Turns out, weather stories are front page news.

And turns out, I spend a lot of time talking about the weather. (You might, too.)

And y’all? The weather has changed to usher in fall… at least for now.

So with that in mind, here are some favorite soups and stews to pair with cooler temps:

  • Chicken and Sausage Gumbo: a Cajun classic, with a dark roux and no tomatoes. This one takes a while, so make a batch during the weekend. Make a half batch if you’re not feeding a crowd and always remember to freeze bonus leftovers for later.
  • Slow Cooker Baked Potato Soup: my kid who is NOT into potatoes loves this one. That’s all you need to know. Plus, it cooks all day, and you come home to a delicious, comforting soup.
  • Sweet Potato Bisque: with a little curry and the natural sweetness of sweet potatoes, this bisque strikes the perfect balance.
  • Turkey Taco Soup: like the classic my mom made, but with ground turkey instead of beef. Dress it up however you like!
  • French Onion Soup: 100/10 recommend if you’ve got time to caramelize those onions. I am absolutely obsessed with this one year-round.
  • Rotisserie Chicken Noodle Soup: this is a weekday mainstay at our house during the chilly months. It comes together relatively quickly and stores beautifully. Just be sure to store the noodles separately from the soup!
  • Roasted Cauliflower Soup: creamy and cheesy cauliflower soup is like a big hug in a bowl.
  • Spicy Tomato Soup: this one’s got a kick! (You’ve been warned.) Serve with a buttery grilled cheese sandwich for the perfect pairing.

My favorite soup-making tools

  • Dutch Oven: my 7 qt. Le Creuset Dutch oven gets a loooooooot of use during soup season. While I’m disappointed my color has been discontinued (apparently, purple is the hardest color to make?!), the functionality of this product is spectacular. I've had it for more than a decade, and it's still going strong.
  • Ladle: you can’t serve soup without a good ladle. I’m particularly into a ladle that hooks on the side of your pot so that you don't have to worry about an extra mess on the counter or stove.
  • Liquid measuring cup: unless you’re using the whole carton of stock (you might!), this measuring cup for liquids makes life easier and less messy for pouring.
  • Glass storage containers: I love these because they’re functional and clean up easily. (No stained Tupperware here!) As an added bonus, you can heat these in the microwave without fuss, too.

Also, one of my favorite things about a soup night is pairing the soup with a homemade bread item, like sweet cornbread muffins or honey jalapeno cornbread muffins.

Which sounds like a recipe you’d like to try this weekend?

Happy cooking,
Erin
